Ahi. Kitchen Garden

Fresh, organic produce
grown by our team for our guests

Our Garden Story

Ben has always dreamed of having his own kitchen garden to supply Ahi’s guests with the best organic produce available. In the middle of Auckland’s lockdown in October 2021, the Ahi Kitchen Garden became a reality.

Since our opening in August 2020, Tamsin’s Secret Garden, based in Patumāhoe, South Auckland, has supplied us with fresh organic produce. In October, Tamsin set her sights on another very important project which you can follow on Instagram: walking_the_long_white_cloud and Ahi officially became the permanent caretakers of the land.

At Ahi we are committed to the continuation of Tamsin’s vision: “Over the last 9 years we have transitioned to regenerative agriculture. We built soil and soil life and stopped trying to kill stuff. We ditched the flawed concept of “replacing soil nutrients”and allowed nature to do its thing. It has been liberating and the results are remarkable. Our vegetables have complex, intense flavour, our garnish leaves and edible flowers have a great shelf life. Regenerative agriculture offers a much-needed solution to climate change, distinct from other methods of growing which simply exacerbate it.”

— Tamsin Wilson, Secret Garden

“We are really excited to write the next chapter of our Patumāhoe whenua, retaining a strong organic and seasonal approach. We now have the opportunity to grow for taste and bypass the standardisation of produce that you see in supermarkets. This is an absolute game changer for our menus and our restaurant team (who are now all gardners!) and by extension those who dine with us.”

— Ben Bayly, Owner + Executive Chef

Driving the Ahi. Menu

What makes our kitchen garden so valuable is the soil. Patumāhoe has a rich red volcanic soil that produces great vegetables; combined with our organic growing practices, regenerative agriculture & composting program where green waste from the restaurant is returned to the earth creates a closed loop.

We grow for flavour and can now manage the shortest amount of time between harvest and the finished product being on the table for guests to enjoy.

Our plan is to harvest, prepare and serve exceptional, organic produce to our guests with a focus on sustainability and continued environmental awareness.

“It feels great to direct our produce supply and maintain the quality and freshness of our ingredients.”

– Mike ‘The Russian’, Head Chef

“We are now able to deliver the whole package from the earth to the table and back again. This is truly a reflection of the Ahi philosophy.”

— Chris Martin, Owner & GM

“I love that the vegetables are becoming the heroes of the dishes that make up our menu.”

— Andrea Cattalini, Chef + Chief Gardener

“I am so grateful to Tamsin and her team who have laid an amazing foundation and feel humbled to be entrusted with this special land.”

— Ben Bayly, Owner + Executive Chef
